This idea played a foundational role in his life growing up in Italy and inspired many of the menu's classic dishes. Start the meal with roasted octopus with chickpeas, chorizo, and a cherry tomato ragu. Continue with the tender Chianti-braised short ribs or house-made black winter truffle pasta. If you still have room, try the decadent panna cotta with strawberry coulis.
